This is a wonderful infant hat pattern to use for NICU donations. The pattern gives instructions for micro-preemie through newborn but it can easily be adjusted for larger (or smaller) sizes.

The pattern is written for DK or sport weight yarn but if you wish to make the hat larger or smaller you can choose to use a heaver or lighter weight yarn and corresponding needles OR you can adjust the stitch count by a multiple of 8 stitches.
