There is more than one way to do things indeed. Including knitting mittens. While circular construction seems to be the current standard, the method I was taught as a young girl was flat and sideways. It might seem counterintuitive, but it works - and lends itself especially well to bulky and textured yarns - which can be awkward to work around a small circumference in the round, and much simpler and quicker to knit flat.
