In a part that was created for him “out of thin air,” actor Jackson Douglas’s role as farmer and produce supplier for the Dragonfly Inn, Jackson Belleville, was never meant to last more than a few episodes. He was married at the time to the original Sookie—Alex Borstein, who had worked with creator Amy Sherman-Palladino’s husband, Dan, doing voiceover work for Family Guy. Sherman-Palladino created the role for Douglas saying, “Oh, I’ll write a part for you.” Douglas recalls, “I was just gonna be the vegetable guy—just be some comic relief,” but when working opposite Melissa McCarthy, it was clear they had excellent on-screen chemistry. A short character arc suddenly turned into a 57-epsiode run on the popular series, with his character eventually becoming Sookie’s husband, a father, and the Town Selectman of Stars Hollow.
