Size can be adjusted by altering gauge slightly: fewer stitches per inch (larger needle) will make a bigger hat; more stitches per inch (smaller needle) will make a smaller hat.

Feel free to use more or fewer rows of holly in your hat; leave off the appliqué leaves and berries or move them to a different part of the hat according to your taste.
